Brinjal Kosthu

Ingredients

  1. Brinjal / Egg plant                                             - ½ kg
  2. Onion                                                                    - 2
  3. Tomato                                                                                - 4
  4. Green chillies                                                     - 8
  5. Ginger                                                                  - 1 piece
  6. Garlic                                                                     - 8 flakes
  7. Mustard seeds                                                  - 1 tsp
  8. Cumin                                                                   - ¼ tsp
  9. Black gram dhal                                                 - 1 tsp
  10. Turmeric powder                                             - a pinch
  11. Curry leaves                                                       - 1 spring
  12. Coriander leaves                                              - 2 spring
  13. Oil                                                                           - 1 spoon full
  14. Salt                                                                         - to taste

Method

  1. Chop the onion, tomato, and cut the brinjal into small Dices put in water.
  2. Chop green chillies, grind the ginger and garlic.
  3. Cook the brinjal, onion, tomato, green chillies, with coconut water and add salt and turmeric powder.
  4. Cook at least single sound in good fire simmer it and mash well.
  5. Heat the oil in kadai, add mustard, cumin seeds and dhal black gram (split) fry it well.  Then add ginger garlic paste.
  6. Add the boiled and mashed brinjal / Egg plant and mix it well.
  7. Remove from heat and serve hot.
